When we set out to create Vesper Bites, we knew we wanted more than just a pretty package. We wanted flavour. Texture. Craft. Something that would feel elevated and fun at the same time. And that meant finding the right partner — one with a deep-rooted tradition in making candy that feels special.

Naturally, that brought us to Belgium.

Belgium is famous for its chocolate — that part of the story is well known. But the country also has a rich, under-the-radar legacy in premium candy making, particularly gummies. While countries like Germany dominate the mass-market gummy space with brands like Haribo, Belgium has quietly cultivated a tradition of small-batch, artisan confectionery that prioritises quality ingredients, traditional methods, and flavour complexity over sheer volume.

Belgian confectioners tend to work in smaller batches, use higher ratios of fruit juice, and take more time with the curing process — the step where gummies develop their signature chew. The result is a texture and flavour depth that mass-produced gummies simply cannot replicate. This is the candy-making culture we wanted to tap into.

Finding the Right Partner in Evergem

After months of searching, tasting, and obsessing over details, we found exactly what we were looking for in a family-owned confectionery in Evergem, Belgium. Nestled just outside of Ghent in the Flemish countryside, their team brings decades of experience in producing artisanal gummies using traditional European methods and modern flavour precision.

We met with them in person, walked their production floor, and tasted dozens of batches until we landed on the perfect combination of flavour, texture, and quality. What struck us most was their approach to ingredients — they use real fruit juice, natural colours, and avoid the shortcuts that large-scale manufacturers rely on, like palm oil and artificial dyes. Their philosophy aligned perfectly with ours: make something genuinely good, not just something that looks good.

The partnership was not simply about finding a manufacturer. It was about finding a team that cared about the details as much as we do — the slight tartness in a grapefruit heart, the balanced sweetness in a peach bellini, the warm undertone in an amaretto cherry. These are not flavours you get right on the first try. They are the product of iteration, expertise, and a shared obsession with getting it exactly right.

From Cocktail Bar to Candy Box

The other half of the Vesper Bites equation is the cocktail inspiration. Before Vesper Bites, our team spent years developing cocktail recipes through a sister brand. That experience taught us something important: great cocktails are about balance. The interplay between sweet, sour, bitter, and aromatic is what separates a memorable drink from a forgettable one.

We brought that same thinking to candy. Each Vesper Bites flavour is modelled after a classic cocktail — Paloma Hearts capture the tangy grapefruit and citrus of a Paloma, Negroni gummies deliver bittersweet orange and herbal complexity, and Cosmo Bears balance tart cranberry with citrus lime and smooth orange. The Belgian confectioners in Evergem helped us translate these multi-layered cocktail profiles into gummy form — a challenge that required far more precision than a simple fruit-flavoured candy.

The result is a lineup of ten distinct flavours that taste like real cocktails, not like artificial candy approximations. And every single one is completely alcohol-free — inspired by cocktails, but safe and enjoyable for everyone.

What Belgian Craftsmanship Means in Practice

So what does "Belgian-crafted" actually mean for the gummy in your hand? Here is what sets our production process apart from mass-market alternatives:

Real fruit juice and natural flavours. Our recipes start with actual fruit juice, not synthetic flavouring concentrates. This is more expensive and harder to work with, but it produces a depth of flavour that artificial ingredients cannot match.

Natural colours only. We use colours derived from natural sources like carmine and plant-based alternatives. You will not find artificial dyes like Red 40 or Yellow 5 in any Vesper Bites product.

No palm oil. Many gummy manufacturers use palm oil as a processing aid. We chose a production partner that does not, both for quality reasons and environmental ones.

Extended curing time. Our gummies cure longer than mass-produced alternatives, which gives them a smoother, more satisfying chew — firm but not rubbery, soft but not mushy.

Small-batch production. Working in smaller batches allows for tighter quality control. Every batch is tasted and evaluated before it moves to packaging.

From Evergem to Your Table

Today, every Vesper Bites gummy — whether it is a Prosecco Bear, a Lemon Drop, or a Peach Bellini Heart — is made in Evergem with the same care and craftsmanship Belgium is known for. From there, they are packaged in Toronto, where our company is headquartered, and shipped to boutique retailers and customers across Canada.

We designed our packaging to reflect the same attention to detail that goes into the candy itself — bold colours, premium finishes, and occasion-specific gift boxes for birthdays, thank-yous, congratulations, and cocktail nights. Because if the candy is going to be this good, the experience of giving and receiving it should be too.
